I helped my templar friend work out a 750pt army, and I'll say the same thing.
First off... the Emperor's Champion is amazing for his points. Stick him in a veteran squad (sword brethern) or a 10 man assault initiate squad and he will kick butt. The only Vow that is really worth anything IHMO is Accept Any Challenge, No matter What the Odds.... or whatever the one that makes you hit at 3+ in CC... I forget what its called (dont own the codex).
Second off... in 750pts, you'll only need, unless you face an evil 'nid player who'll stick a Hive Tyrant, one missile launcher. Get a 5 man squad and and a neopythe just for scoring purposes.
Finally... the chaplain is the way to go in Black Templars, so use one, definatly. A foot chappie w/ a command squad gets a vet. sarge, so that is good, however, if you are hurting for points, a smaller crusader squad will do good.
Honesty... I'd something like
1 chappie, crozius, termie honors, bolt pistol
1 Emperor's champion
2 Crusader squads x 10 w/ either powerfists, powerweapons or melta guns, bp and ccw, frag 'nades if you have the points.
1 crusader squad x 5 w/ 1 neopythe, bolters and missile launcher
And finally, if you have the points... take a Dreadnought, its good fire support and all around decent unit, stich's suggestion of Assault Cannon and Missle Lancher is good, IHMO.
