Flamer-armed assault squads are indeed killer. I have a Tau-friend, and he absolutely hates flamers because he always has his nice firing lines so he can get maximum range and support from his Fire Warriors, but once the flamers get there, it's hell.
Don't put anything but the Death Company with the Chaplain! This means they will 1) stay under control and 2) get to re-roll attacks when they charge! With 4 rending attacks each on the charge, that is extremely nasty! Ikarus is right: take as many DC as you can. That said, for 1500 points, this might be difficult whilst keeping with a good amount of troops, fast attack and Heavy support. I try to always have at least 7 Death Company, and ALWAYS with Jump Packs. The 5 points each is well worth it.
I can't say I agree with Ikarus's philosophy of taking Veteran Assault Troops over normal Assault Troops either. It's not too much of a difference, but I tend to find that more models wins the day. However, the options are good, so including one isn't the worst thing ever. Honour Guard aren't (in my opinion) bad either.
I would get a Baal Predator as your next purchase (if you plan on expanding). It's a nasty tank, and can deal pretty effectively with both armour and infantry.
