you'd need to do something to tone down the elephantiness as that wouldn't fit in with the orky feel.

well it would be a good base for a conversion.
i would take off the trunk to start, then put the tusks somewhere safe. then add a HUGE mouth, in proportion to the rest of it. add the tusks back in there
with the howdah, no cloth sides. plasticard some plate onto it, then a kannon or three.

i dunno, a very extensive conversion.
it would be a good base, but for all the effort i would just get a squiggoth.

Yeah, just buying a squiggoth will save you the bother of attempting a conversion which, unless you have some seriously advanced GSing skills, you won't be able to complete.

Squiggoths are covered in scales that the Mūmakil just doesn't have.
The Mūmakil is also a much smaller model so it won't look right next to all the other Apoc scale stuff.

1) squigoths come in numerous sizes, hence why FW produce a small and a gigantic one
2) whats to say a squigoth has to be a squigoth? i.e. BlueTablePainting did a feral ork army and used some mammoth toys and built howdas and crew for them to be used on an ice world.

Suppose you're right there.
But GW won't allow you to use any LOTR parts on Warhammer models in official events.
Some kind of licensing thing they have that makes no sense and no one understands.

you do know that orks only make 3 separations in species

1 orks
2 food
3 squigs (basically anything too tough for an ork to kill with his bare hands) so i say the mumakil would do great!
